L'Atelier Robuchon in Tokyo. In Ginza, I think. They were incredible. Rest in peace to old Robuchon, who's an incredible chef. But that restaurant specifically there in Tokyo is incredible. I have been to a couple and that's been my favorite.
What differentiates it? The staff. The name is escaping me right now and I'm really bad at names in general, so I usually keep a list of names on my phone. But the general manager there, he was from London. I'll find his name for you. He had been working with Joël Robuchon for quite a while at a couple of different locations.
My brother and I had dinner there. We sat and talked with him for well into closing and made the entire experience. He was incredible. One of the best GMs I've seen for a restaurant ever. It came up in conversation that I'm in hospitality, but I generally don't lead with that. I like to keep a little bit of anonymity as I am out and about.
