Estate grown grains distilled to Empire Rye standards, this style of whiskey by Sagaponack Farm Distillery is really an ode to the versatile and tolerant cereal grain. Less fussy than wheat, more reliable than oats, our family has grown rye in Sagaponack for decades but never for whiskey. Until now. Our rye whiskey is 94% rye, both malted and raw and 6% malted barley. Itβs austere and spicy, and yet, it has a mellow cocoa note to tame the finish.
Most ryes come in peppery and sharp, but this one? Itβs smooth, with a long, steady finish and this incredible cocoa note that just shows up and stays. Some even pick up vanilla. Itβs subtle, but itβs there.
That flavor comes from the malting process β when the rye and barley are toasted, essentially heating up the grains to a certain point and then cooling them to activate deeper layers of taste. Think of it like the difference between a plain slice of bread and a toasted sourdough with a great crust. Thatβs where the flavor lives.
And all of it β the rye, the barley β is grown right here, just across the highway on our farm. Coastal, and deeply mineral-rich, you can taste the soul Sagaponack in each pour.
