The honeycomb is the distinctive pattern of irregular holes throughout our baguettes. This isn't just for visual appeal — it's evidence of proper fermentation and development.

When we see baguettes with tight, uniform interiors that resemble regular bread, we know something's missing. There's no proper fermentation. Our honeycomb structure creates both visual beauty and the foundation for exceptional flavor and texture in every bite.

Our Poolish Method 🧪

We begin with a poolish — a pre-fermentation starter with just enough yeast to initiate the process. This critical step separates our baguettes from mass-produced varieties lacking depth and character.

Our method creates complexity without sourness. We believe baguettes shouldn't be sourdough. We carefully control fermentation, stopping at precisely the right moment to capture that perfect flavor profile before the dough sours. That's become our signature.

Our Texture Philosophy 😋

You can also hear the magic when you break our baguettes. Fresh from our ovens, they sing with a distinctive crackle — like breakfast cereal — when tapped or pressed. Even hours later, the contrast remains: pronounced chew from the crust giving way to pillowy softness inside.

We smile when we see first-time customers purchase just one baguette. Our baguettes rarely survive the journey home intact.
