We just started selling pizza dough in the freezer with instructions on how to thaw it, let it rise, shape it, and bake it.
It’s the same dough we’ve been using in-house for over thirty years.
We also make pizza provençal every morning — caramelized onions, olives, Parmesan, Gruyère, tomato sauce — baked on a sheet tray and cut into squares.
We usually make one half sheet a day and sell it out. Sometimes it’s on the menu, sometimes just on the board. It’s one of those things that people in the know come looking for.
