Herb’s defines fried chicken in Montauk -- crispy, golden, perfectly seasoned. The kind of thing you plan your day around.
Even my wife, a third-generation Montauker, doesn’t know the secret recipe. But one thing’s for sure -- the ratio of crispy skin to juicy meat is perfection.
Our chef Caroline’s version at Sen could take the crown, but in fairness, we do small batches. Cromer’s deserves a podium spot, too. But when it comes to the top contender in the Hamptons, Herb’s still runs the show.
Get there between 10 and 11 a.m. -- that’s when the chicken hits peak crispiness while staying juicy. Get a bunch for the beach or your friends and family poolside at home. Wait too long, and you might miss out. They sell out fast.

Jesse was born in Manhattan, grew up in Tokyo, Hawaii, and Sag Harbor, and is now married to a third-generation Montauker.
