By Kyle Fengler, co-owner of Loaves & Fishes:
When asked about books, I've been going through a lot of my grandmother and grandfather's old poetry books in German. It's a way of staying mindful of keeping a connection with my family.
But if there's one book that's truly meaningful and that I'd recommend to everyone visiting the Hamptons, it would be my grandmother's original cookbook - the first Loaves and Fishes Cookbook that was published in 1985.
There's something for every occasion, whether you're cooking at home, entertaining for a large group of people, doing a picnic on the beach, or going on a boat.
We still have it in publication, and I feel it remains the most formative collection of what we do at Loaves and Fishes - who my grandmother was as a chef, her style, and her influences. It's a great resource both for culinary fundamentals and for understanding the character of who she was.
If you're flipping through the pages and want an insider recommendation, look for the recipe for roulade or rouladen.
It's a very classic German dish made by taking veal, ham, and cornichons, rolling them up and doing a very long, slow braise.
This is something I grew up with my grandmother cooking, and the recipe captures it perfectly. It's relatively easy to prepare, absolutely delicious, and for me, carries tremendous nostalgia.
This dish exemplifies the European influences that helped shape Hamptons cuisine through establishments like Loaves and Fishes.
