⚡Chef Weiner discovered Bologna's perfect balance of architectural beauty, classic cuisine, and human-centered dining at former pharmacy Drogheria Della Rosa. 

Civilization

Bologna is the most civilized place on Earth. When we were there, my wife was pregnant at the time — our daughter was born in April and this was the end of December, so she was obviously pregnant. Everywhere we went in Northern Italy, it was like, Oh, congratulations! Have a glass of Prosecco!

The Magical Pharmacy

We found an amazing restaurant that used to be a pharmacy called Drogheria Della Rosa. I'd seen it written up in 36 Hours in Bologna in the Times earlier that year, so it was on my radar. We went during lunch and it was slammed, but I caught the proprietor's attention and asked if we could come for dinner. He just said, What time? without writing anything down or seeming to really register the reservation request.

The place was mobbed for dinner with a line out the door, but he made brief eye contact with me and recognized us. The food was all classic traditional northern Italian dishes with spot-on execution. Everything was so good. The architecture and the people made it even more civilized.

This card was written by Chef Jason Weiner, who opened Almond Restaurant in 2001 with Eric Lemonides – friends since they were six and five growing up in Brooklyn. Jason honed his craft in kitchens from New York to San Francisco to Las Vegas before settling in the Hamptons with his wife Almond Zigmund, an artist whose name and art graces the restaurant.
