We use a lot of local ingredients — some grown right here, others brought in from friends doing it right. This wildflower, goldenrod honey comes from Vermont, from friends of ours who (live literally off the grid and) really know what they’re doing.
It’s raw, unfiltered, and unheated. That makes a huge difference. Depending on the season — spring, summer, fall, or winter — the honey shifts. This batch is winter honey, so it’s crystallized, a little thicker, denser, creamier. Sometimes it’s dark and pourable, sometimes lighter and firm. It’s just about when it’s pulled and how it’s handled.
Don’t be put off by separation or texture. Stir it up. Raw honey changes with the seasons — and that’s exactly why it’s so good.
