Sen has been a cornerstone of Sag Harbor for 30 years β a family restaurant run by brothers Jesse and Tora, whose sumo wrestler father founded it.
That sense of heritage and care extends to everything that happens in the kitchen.
For Sag Saturdays, Sen is putting the craft on display. At noon, the sushi chefs will break down a whole tuna β flown in from Spain, weighing over 100 pounds β right at the front of the restaurant.
The action unfolds at the entrance table, visible from the dining room and even through the windows from Main Street.
For $25, guests can follow the performance with a tuna lunch: hand roll, sushi, and miso soup.
