Our Stone Fruit Salsa Recipe

We only make peach salsa in the summer because that's when the peaches are in season.

A peach salsa is really just peaches — plus red onion, a little garlic, tomato, cilantro, lime juice. Sometimes we add apricot. Sometimes plum.

When you start mixing stone fruits like this, it basically becomes a stone fruit salsa, and it tastes like summer.

No matter which fruit you choose, our salsas are super fresh and amazing.

It's that savory bite right before the meal — on a chip, on a crostini... even served with chicken schnitzel at dinner.

Our stone fruit salsa recipe below is lovely and easy to make at home.

Just chop it up.

Stone Fruit Salsa (Makes 1 quart)

From Loaves & Fishes Farm Series Cookbook: Pike Farms

·      2 ripe peaches, chopped

·      2 ripe plums, chopped

·      2 pluots or apricots, chopped

·      1 small red onion, minced

·      1 clove garlic, minced

·      1 beefsteak tomato, diced

·      ½ cup chopped cilantro leaves

·     ¼ cup fresh-squeezed lime juice

·      Kosher salt to taste

·      Fresh tortilla chips

Instructions

Toss the fruits, onion, garlic, tomato, cilantro, and lime juice together in a bowl. Season with salt. Serve with tortilla chips — or however you like it best.
