Corn pudding is a classic for us. We serve it all year because people love it — and once you try it, you’ll get why.

It looks like cornbread, but it’s not. Think of it more like a corn soufflé: fluffy, full, and rich with flavor. Made with fresh corn, cottage cheese, heavy cream, and eggs, it’s hearty and comforting with a protein boost and just a little kick from jalapeño.

We keep the spice mild — just enough to add depth without overwhelming. The result is soft, creamy, and just a little savory-sweet.

What to Serve It With

Honestly, corn pudding goes with anything. It’s versatile and "bread-and-butter-ish" in the best way.

Try it with:

·      Chicken schnitzel

·      Tomato soup

·      Or any of your favorite soups or stews

It plays nice with pretty much everything.

Recipe: Corn Pudding (Serves 8)

From Loaves & Fishes Farm Series Cookbook: Pike Farms

·      4 cups fresh corn kernels

·      1 small jalapeño, ribs removed, minced

·      3 Anaheim chiles, ribs removed, chopped

·      ¾ cup all-purpose flour

·      1 teaspoon baking powder

·      2 tablespoons granulated sugar

·      1 tablespoon kosher salt

·      8 oz (1 stick) salted butter, melted

·      2 cups full-fat cottage cheese

·      1 cup heavy cream

·      6 large eggs

Directions

Preheat oven to 350°F.

In a food processor, purée corn and chiles until smooth. Transfer to a large bowl and whisk in remaining ingredients until combined. Pour into a buttered 9x13-inch casserole dish and bake for 1 hour, or until set.
