Estela’s really good — really smart, really delicious. It’s from Ignacio Matos, the chef behind Altro Paradiso and Lodi. It’s Spanish in feel, but modern. The kind of menu that changes over and over.
Scallops laid over dates. Endives with walnuts and anchovies. A squid ink arroz negro that was so incredible Sam tried to recreate it later. The whole thing had that socarrat crunch.
Whatever they’re doing, I’m down. And they’ve got a Michelin star.
Trust the kitchen. Let them cook. That arroz negro? A must.
