I may co-own K Pasa in Sag Harbor, but I love to start my day here, and itâs a real local gem.
My favorite is always chilaquiles â with its tomato sauce base, tortilla chips, poached eggs, pickled onions, queso fresco. Crunchy, savory, deep umami, with the pickled onions providing just enough acid to cut through it all. Itâs a perfect bowl of food.
Keeping it simple? Scrambled eggs, bacon, toast, and our black beansâmade with coconut milk for extra depth.
Bringing the kids? My son loves the pancakes and overnight oats. He eats them all the time.
And of course, there are breakfast tacos â eggs, tortilla strips, cheese, or chorizo. Our sloppy chorizo taco is made with Impossible meat, seasoned so well youâd never know itâs vegan.
