The distillery is deeply committed to quality over scale. Everything is grown with care â no herbicides, no GMOs, and a deep respect for the soil. Their process is rooted in integrity, collaboration, and creativity â often blending old-world traditions with modern techniques.
They source everything (with the one exception of juniper berries) that goes into the making of the spirits from their own fields. From heirloom tomatoes to Peter Wilcox potatoes, from chamomile and lemon peel to rye grown on coastal fields, itâs all part of a bigger agricultural vision: spirits that taste of place.

Empire Rye â Made with 94% Sagaponack-grown rye and 6% malted barley. Deep, spicy, smooth, with unexpected notes of cocoa and vanilla.
Bourbon â Made with Silvermine corn, malted rye, and barley. Aged over five years, with warm notes of cherry, caramel, and vanilla.
Summer Whiskey â An oat-and-barley whiskey made for warm nights and beach fires. Light, mellow, with notes of cherry, brown sugar, and honey.

Original Potato Vodka â Estate-grown Katahdin potatoes. Creamy, earthy, rich â a martini must.
Wheat Vodka â Grown a quarter mile from the Atlantic. Neutral yet subtly sweet, with grassy and oceanic undertones. Great on its own or in mixed drinks.
