Made with fresh juices, tequila, and a splash of blood orange juice, the Ruby Rita is a blood orange margarita we’ve been serving at The Beacon forever. They were especially popular during COVID, when we started batching them for customers.
Carl, who runs the bar at both restaurants, had to step in and say, David, these are too strong. We made adjustments — but I think it helped take some of the pain away from Sag Harbor during COVID.
