Experience Over Everything

Noma is incredible. It's a very experience-driven restaurant—you're not just going there for, you know, is the food worth it? You are going there to experience a different approach on cuisine, somebody's creativity and what that means and an entirely different focus on locality.

Ants Instead of Lemons

They're really focusing on what is grown in Denmark, what they produce in their area, from the food to the complete lack of citrus. They are raising and harvesting a specific species of ant to dehydrate, to turn into something that gives you the characteristics of citrus. It's a really large-scale operation and they are very front-facing about it and very friendly.

Beyond the Dinner Table

A big part of your time there isn't even just sitting down at the dinner table—it's taking a walk around with somebody and seeing what is going on, seeing every aspect of what's going on there, their fermentation lab, everything they have there. The decor is sort of rustic but modern. There's a lot of wood. It's a little bit of a warmer, like wood and black kind of environment. It's a really one-of-a-kind experience.
